Steph’s Hot Tamale Balls

The Tamale Balls:
1lb ground beef or pork
1lb pork sausage(hot or Cajun)
¾ cup corn meal
½ cup flour
¾ cup tomato or V-8 juice
1 tsp garlic powder
2 ½ tsp chili powder
2 tsp cumin
1tsp salt
½ tsp cayenne pepper
Combine all ingredients & mix well. (for easier mixin, I mix the driy infredients before adding toth meat)
The Sauce:
5 cups tomato or V-8 juice
2 tsp chili powder
2 tsp cumin
2 tsp salt
Combine all ingredients and mix well. Pour over uncooked balls and cook over medium heat for 45-60 minutes.
Recipe can be doubled and freezes well. I use reduced fat ground pork, but still have to skim off excess fat on the top of the sauce. Skim the fat before serving
