Apricot & White Chocolate Scones

2/3 cup Butter
3 1/2 cup Flour
1/2 cup Sugar
4 teaspoons Baking Powder
1/2 teaspoon Salt
2/3 cup finely chopped Dried Apricots
1 cup White Chocolate Chips
2 Eggs
2/3 cup Half & Half
Heat oven to 400 degrees. In food processor, process butter, flour, sugar, and baking powder, and salt until
mixture is crumbly. Stir in apricots and white chocolate chips. By hand, add egg and just enough
half & half, so dough forms a ball. Turn dough onto a floured surface. Kneed lightly 10 times. Pat into
two(2) eight inch circles and cut each circle into nine(9) wedges. Sprinkle with sugar if desired. Bake
on greased cookie sheet about 15 minutes, or until golden brown. Serve warm
You may use chopped pecans instead of white chocolate chips, or both.
You may also use any type of dried fruit,(ie: cranberries, raisins, pears, etc.)
